One Two Punch

My friend Mary makes the best punch. It is a prepare ahead frozen base that you add a clear soda to at party time. Jello is used for the main source of flavor and color so you can make it to the hue that best compliments your party. The lone exception to this is blue, which turns out kind of greenish because of the pineapple juice. Punch made with apricot Jello is my favorite. I mix it with rum and call it a Jack-O-Lantern for Halloween parties. Here is the green version I made for the recent slumber party:



MISS MARY'S PUNCH
Makes 2 batches, each batch will fill one punchbowl.

3 small boxes of Jello
4 cups white sugar
1-16oz bottle of lemon juice
2-46oz cans of pineapple juice
4 cups boiling water
3 cups warm water
6 cups water
2-2 liters bottles of clear soda (7-Up or like)

Dissolve Jello in 4 cups boiling water. Bring sugar to a boil in the 3 cups warm water. Combine with Jello mixture. After it is cool add lemon juice, pineapple juice, and remaining 6 cups of water. Freeze in two large plastic containers. Remove one or both of the containers approximately 3 hours before serving. At serving time add a bottle of clear soda per batch. Break up mixture with knife if necessary.
